Ingredients:

  • 8 oz fettuccine pasta
  • 2 pieces chicken breasts, diced
  • 2 tbsp olive oil
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions: 

  • Cook the fettuccine pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned.
  • Add the chopped onion and minced garlic, sauté until fragrant.
  • Stir in the sliced mushrooms and cook until they are softened.
  • Pour in the chicken broth and heavy cream. Let it simmer for a few minutes.
  • Add the cooked pasta and grated Parmesan cheese to the skillet. Toss everything together until well combined.
  • Season with salt and pepper to taste.
  • Serve the creamy chicken and mushroom pasta hot, garnished with fresh parsley.
