Ingredients:  

Main Ingredients

  • 1.5 lbs potatoes peeled and diced
  • 1 cup water
  • 0.5 cup mayonnaise
  • 2 tablespoons mustard
  • 0.25 cup chopped pickles
  • 0.25 cup chopped red onion
  • to taste Salt and pepper
  • Chopped fresh parsley for garnish

Instructions: 

  • Place the diced potatoes and water in the pressure cooker.
  • Close the lid and cook on high pressure for 5 minutes.
  • Quick release the pressure and drain the potatoes.
  • In a large bowl, mix together the mayonnaise, mustard, pickles, red onion, salt, and pepper.
  • Add the cooked potatoes to the bowl and gently toss to coat.
  • Garnish with chopped parsley before serving.

Notes:

For a tangier salad, add a splash of pickle juice to the dressing mixture.
