Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup BBQ sauce
  • 1 bag tortilla chips
  • 2 cups shredded cheese

Optional Toppings

  • diced tomatoes optional
  • sliced jalapeños optional
  • sour cream optional
  • chopped cilantro optional

Instructions: 

  • Set the Instant Pot to sauté mode and brown the ground beef with the diced onion and bell pepper.
  • Add the black beans, corn, and BBQ sauce to the Instant Pot and stir to combine.
  • Layer half of the tortilla chips in the Instant Pot, then top with half of the meat mixture and half of the shredded cheese. Repeat with another layer of chips, meat, and cheese.
  • Close the Instant Pot lid and set to manual high pressure for 5 minutes. Quick release the pressure when done.
  • Carefully remove the inner pot from the Instant Pot and serve the nachos with your favorite toppings.

Notes:

Feel free to customize the toppings to your liking. You can also add more cheese or different types of beans if you prefer.
