Ingredients:  

Main Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup low-sodium chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can (14 oz) diced tomatoes
  • 1 cup sliced zucchini
  • 1 cup sliced bell peppers
  • 1/2 cup grated Parmesan cheese

Instructions: 

  • Place chicken breasts in the Instant Pot.
  • Add chicken broth, onion, garlic, oregano, basil, salt, pepper, and diced tomatoes.
  • Close the lid and set the Instant Pot to manual high pressure for 10 minutes.
  • Once done, do a quick release and open the lid.
  • Add zucchini and bell peppers, close the lid, and cook on manual high pressure for an additional 5 minutes.
  • Release the pressure and open the lid.
  • Shred the chicken using two forks.
  • Serve the chicken and vegetables over cooked pasta or rice.
  • Sprinkle with Parmesan cheese before serving.
