tomato sauce

Instructions:
Rinse the lentils under cold water and drain.
Set the Instant Pot to sauté mode and add a bit of oil. Sauté the onion, garlic, and bell pepper until softened.
Add the diced tomatoes, tomato sauce, vegetable broth, lentils, chili powder, cumin, paprika, salt, and pepper to the Instant Pot. Stir to combine.
Close the lid and set the Instant Pot to manual high pressure for 15 minutes.
Once the cooking time is up, allow for a natural pressure release for 10 minutes before quick releasing any remaining pressure.
Taste and adjust seasoning if needed. Serve hot with optional toppings.
Notes:
This recipe is perfect for meal prep and can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
