Ingredients:  

Main Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup coconut milk
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp red curry paste
  • 1/4 cup shredded coconut
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Cooking spray

Instructions: 

  • In a bowl, mix together the ground chicken, breadcrumbs, coconut milk, garlic, soy sauce, fish sauce, red curry paste, shredded coconut, cilantro, salt, and pepper.
  • Shape the mixture into meatballs.
  • Preheat the air fryer to 360°F (180°C).
  • Lightly coat the air fryer basket with cooking spray.
  • Place the meatballs in the air fryer basket in a single layer.
  • Air fry at 360°F (180°C) for 12-15 minutes, or until the meatballs are cooked through and golden brown.
  • Serve hot with your favorite dipping sauce or over rice.

Notes:

These meatballs can also be served with a side of steamed vegetables or a fresh salad for a complete meal.
