Ingredients:  

Main Ingredients

  • 1 pound fresh strawberries hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions: 

  • Place the sliced strawberries, sugar, lemon juice, and vanilla extract in the Instant Pot.
  • Close the lid and set the Instant Pot to Manual, High Pressure for 1 minute.
  • Once the cooking time is up, allow for a natural pressure release for 5 minutes, then do a quick pressure release.
  • Open the lid and stir the compote. If you prefer a thicker consistency, you can simmer on sauté mode for a few more minutes.
  • Serve the strawberry compote warm or cold over pancakes, waffles, ice cream, or yogurt.

Notes:

You can store the compote in an airtight container in the refrigerator for up to one week.
