Instructions:
Place the sliced strawberries, sugar, lemon juice, and vanilla extract in the Instant Pot.
Close the lid and set the Instant Pot to Manual, High Pressure for 1 minute.
Once the cooking time is up, allow for a natural pressure release for 5 minutes, then do a quick pressure release.
Open the lid and stir the compote. If you prefer a thicker consistency, you can simmer on sauté mode for a few more minutes.
Serve the strawberry compote warm or cold over pancakes, waffles, ice cream, or yogurt.

You can store the compote in an airtight container in the refrigerator for up to one week.
