Ingredients:

  • 1 cup Guinness beer
  • 2 cups shredded cheddar cheese
  • 1 tablespoon cornstarch
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • to taste Salt and pepper

Instructions: 

  • In a pressure cooker, pour the Guinness beer and bring it to a simmer using the sauté function.
  • In a bowl, toss the shredded cheddar cheese with cornstarch until well coated.
  • Gradually add the cheese mixture into the simmering beer, stirring constantly until the cheese is melted and smooth.
  • Stir in the Dijon mustard, garlic powder, paprika, salt, and pepper.
  • Serve the beer cheese warm with pretzels or vegetables for dipping.

Notes:

For a spicier version, add a pinch of cayenne pepper or a few dashes of hot sauce.
