Ingredients:  

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup quinoa, rinsed
  • 1 pound boneless, skinless chicken breasts
  • 6 cups chicken broth
  • 2 cups water
  • 2 cups spinach

Instructions: 

  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Add the onion, carrots, and celery. Cook for 3-4 minutes until softened.
  • Add the garlic, thyme, oregano, salt, and pepper. Cook for another minute.
  • Stir in the quinoa.
  • Add the chicken breasts, chicken broth, and water.
  • Close the Instant Pot lid and set to high pressure for 8 minutes.
  • Once done, do a quick pressure release.
  • Remove the chicken, shred it, and return it to the pot.
  • Stir in the spinach until wilted.
  • Serve hot and enjoy!

Notes:

This soup is perfect for meal prep and can be stored in the refrigerator for up to 3 days.
