boneless, skinless chicken breasts

Instructions:
Set the Instant Pot to sauté mode and heat the olive oil.
Add the onion, carrots, and celery. Cook for 3-4 minutes until softened.
Add the garlic, thyme, oregano, salt, and pepper. Cook for another minute.
Stir in the quinoa.
Add the chicken breasts, chicken broth, and water.
Close the Instant Pot lid and set to high pressure for 8 minutes.
Once done, do a quick pressure release.
Remove the chicken, shred it, and return it to the pot.
Stir in the spinach until wilted.
Serve hot and enjoy!

This soup is perfect for meal prep and can be stored in the refrigerator for up to 3 days.
