Instructions:
Set the Instant Pot to sauté mode and heat the olive oil.
Add the onion and garlic, sauté until softened.
Add the diced tomatoes, tomato sauce, vegetable broth, sugar, salt, and pepper.
Close the lid, set to high pressure for 5 minutes.
Quick release the pressure, open the lid, and stir in the basil and heavy cream.
Use an immersion blender to blend the soup until smooth.
Serve hot, garnished with additional basil leaves if desired.
Notes:
This soup can be served with a side of crusty bread or a grilled cheese sandwich for a complete meal.
