Ingredients:  

Main Ingredients

  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 onion chopped
  • 1 cup pineapple chunks
  • 1/2 cup ketchup
  • 1/4 cup rice vinegar
  • 2 tbsp reduced-sodium soy sauce
  • 2 tbsp cornstarch
  • 1/4 cup water
  • Salt and pepper to taste
  • Cooking spray

Instructions: 

  • Season chicken with salt and pepper.
  • Set Instant Pot to sauté mode and spray with cooking spray.
  • Add chicken and cook until browned.
  • Add bell peppers, onion, and pineapple. Cook for 2-3 minutes.
  • In a bowl, mix ketchup, rice vinegar, and soy sauce. Pour over chicken mixture.
  • Close the Instant Pot and set to high pressure for 5 minutes.
  • Quick release the pressure and open the pot.
  • In a small bowl, mix cornstarch and water. Stir into the chicken mixture.
  • Set Instant Pot to sauté mode and cook until sauce thickens.
  • Serve over rice and enjoy!

Notes:

Serve with steamed rice or cauliflower rice for a low-carb option.
