boneless, skinless chicken breasts
cut into bite-sized pieces

red bell pepper
chopped

green bell pepper
chopped

onion

pineapple chunks

ketchup
1/4

rice vinegar

reduced-sodium soy sauce

cornstarch

water
Salt and pepper
to taste
Cooking spray
Instructions:
Season chicken with salt and pepper.
Set Instant Pot to sauté mode and spray with cooking spray.
Add chicken and cook until browned.
Add bell peppers, onion, and pineapple. Cook for 2-3 minutes.
In a bowl, mix ketchup, rice vinegar, and soy sauce. Pour over chicken mixture.
Close the Instant Pot and set to high pressure for 5 minutes.
Quick release the pressure and open the pot.
In a small bowl, mix cornstarch and water. Stir into the chicken mixture.
Set Instant Pot to sauté mode and cook until sauce thickens.
Serve over rice and enjoy!
Notes:
Serve with steamed rice or cauliflower rice for a low-carb option.
