Ingredients:  

Main Ingredients

  • 8 oz pasta
  • 0.5 cup sun-dried tomatoes
  • 0.25 cup pine nuts
  • 2 cloves garlic, minced
  • 0.25 cup olive oil
  • to taste Salt and pepper
  • to taste Grated Parmesan cheese for serving

Instructions: 

  • Cook pasta according to package instructions. Drain and set aside.
  • In a pan, toast pine nuts until lightly browned. Remove from pan and set aside.
  • In the same pan, heat olive oil over medium heat. Add garlic and sun-dried tomatoes. Cook for 2-3 minutes.
  • Add cooked pasta to the pan. Toss to combine with the sun-dried tomatoes and garlic.
  • Season with salt and pepper to taste.
  • Serve the pasta topped with toasted pine nuts and grated Parmesan cheese.

Notes:

For an extra burst of flavor, you can add a splash of white wine or a handful of fresh basil leaves to the pasta.
