Instructions:
Cook pasta according to package instructions. Drain and set aside.
In a pan, toast pine nuts until lightly browned. Remove from pan and set aside.
In the same pan, heat olive oil over medium heat. Add garlic and sun-dried tomatoes. Cook for 2-3 minutes.
Add cooked pasta to the pan. Toss to combine with the sun-dried tomatoes and garlic.
Season with salt and pepper to taste.
Serve the pasta topped with toasted pine nuts and grated Parmesan cheese.
Notes:
For an extra burst of flavor, you can add a splash of white wine or a handful of fresh basil leaves to the pasta.
