Ingredients:  

Main Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground turmeric
  • 0.25 teaspoon cayenne pepper
  • 1 cup dried apricots
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions: 

  • Preheat the air fryer to 360°F (180°C).
  • Season the chicken thighs with salt and pepper.
  • Place the chicken thighs in the air fryer basket and cook for 10 minutes, flipping halfway through.
  • In a separate bowl, mix together the onion, garlic, cumin, coriander, cinnamon, ginger, turmeric, and cayenne pepper.
  • Add the spice mixture, dried apricots, and chicken broth to the air fryer basket with the chicken.
  • Cook for an additional 15 minutes, or until the chicken is cooked through and the sauce has thickened.
  • Garnish with fresh cilantro before serving.
