Ingredients:  

Main Ingredients

  • 4 ears corn husked and cleaned
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup cotija cheese crumbled
  • 1 teaspoon chili powder
  • 1/4 cup fresh cilantro chopped
  • 1 lime cut into wedges

Instructions: 

  • Place a trivet in the Instant Pot and add 1 cup of water.
  • Arrange the corn on the trivet.
  • Close the lid, set the valve to sealing, and cook on high pressure for 5 minutes.
  • Quick release the pressure and carefully remove the corn.
  • In a small bowl, mix together the mayonnaise and sour cream.
  • Brush the mayonnaise mixture onto the cooked corn.
  • Sprinkle cotija cheese, chili powder, and cilantro on top.
  • Serve with lime wedges on the side.

Notes:

For an extra kick, you can add a dash of hot sauce before serving.
