Ingredients:  

Main Ingredients

  • 1.5 lbs boneless, skinless chicken thighs cut into bite-sized pieces
  • 1 cup plain yogurt
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 1 inch piece of ginger grated
  • 1 can diced tomatoes 14 oz
  • 2 tablespoons tomato paste
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 0.5 teaspoon cayenne pepper
  • 0.5 cup heavy cream
  • Fresh cilantro for garnish

Instructions: 

  • In a bowl, mix together yogurt, garam masala, cumin, coriander, paprika, turmeric, salt, and cayenne pepper.
  • Add chicken pieces to the yogurt mixture and marinate for at least 30 minutes.
  • Turn on the Instant Pot to sauté mode and add a bit of oil. Sauté onions, garlic, and ginger until fragrant.
  • Add marinated chicken and cook until browned.
  • Stir in diced tomatoes and tomato paste.
  • Close the Instant Pot lid and set to high pressure for 10 minutes.
  • Once done, do a quick release and stir in heavy cream.
  • Serve over rice and garnish with fresh cilantro.
