Ingredients:  

Main Ingredients

  • 2 cups cooked brown rice
  • 2 medium sweet potatoes peeled and diced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 red bell pepper diced
  • 1 cup frozen peas
  • 1/2 cup vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions: 

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and cook until softened.
  • Add the sweet potatoes and red bell pepper, and cook for about 5 minutes.
  • Stir in the cooked brown rice, frozen peas, vegetable broth, thyme, paprika, salt, and pepper. Cook for another 5 minutes.
  • Transfer the mixture to a baking dish and cover with foil.
  • Bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15 minutes until the top is slightly crispy.
  • Serve hot and enjoy!

Notes:

This casserole can be prepared a day in advance and baked just before serving. It's a great make-ahead dish for busy holiday schedules.
