Instructions:
Prepare the chocolate cake mix according to package instructions and pour into a greased 9-inch springform pan.
In a separate bowl, mix together ricotta cheese, eggs, sugar, and vanilla extract. Pour this mixture over the cake batter in the pan.
Cover the pan with foil and place it on the trivet in the Instant Pot. Add 1 cup of water to the pot.
Close the lid, set the valve to sealing, and cook on high pressure for 35 minutes. Allow for a natural pressure release.
In the meantime, prepare the chocolate pudding mix with milk according to package instructions.
Once the cake is done and cooled, spread the chocolate pudding over the top.
Top with whipped topping and refrigerate for at least 4 hours before serving.
Notes:
For best results, make sure the cake is completely cooled before adding the pudding and whipped topping. Refrigerating the cake allows the flavors to meld together beautifully.
