Ingredients:  

Cake Ingredients

  • 1 box chocolate cake mix prepare according to package instructions
  • 15 oz ricotta cheese
  • 4 eggs
  • 3/4 cup sugar
  • 1 tsp vanilla extract
  • 1 package instant chocolate pudding mix prepare with milk according to package instructions
  • 1 cup milk for pudding mix
  • 8 oz whipped topping

Instructions: 

  • Prepare the chocolate cake mix according to package instructions and pour into a greased 9-inch springform pan.
  • In a separate bowl, mix together ricotta cheese, eggs, sugar, and vanilla extract. Pour this mixture over the cake batter in the pan.
  • Cover the pan with foil and place it on the trivet in the Instant Pot. Add 1 cup of water to the pot.
  • Close the lid, set the valve to sealing, and cook on high pressure for 35 minutes. Allow for a natural pressure release.
  • In the meantime, prepare the chocolate pudding mix with milk according to package instructions.
  • Once the cake is done and cooled, spread the chocolate pudding over the top.
  • Top with whipped topping and refrigerate for at least 4 hours before serving.

Notes:

For best results, make sure the cake is completely cooled before adding the pudding and whipped topping. Refrigerating the cake allows the flavors to meld together beautifully.
