Instructions:
Season the salmon fillets with salt and pepper.
In a large skillet, heat some olive oil over medium heat and sear the salmon fillets until cooked through. Remove and set aside.
In the same skillet, add the cherry tomatoes, garlic, and onion. Cook until softened.
Add the vegetable broth and smoked paprika. Simmer for 10 minutes.
Use a hand blender to blend the mixture until smooth.
Return the salmon fillets to the skillet and simmer for another 5 minutes.
Serve the salmon with the smoked tomato broth, garnished with fresh parsley.
