Ingredients:  

Main Ingredients

  • 2 fillets salmon
  • 1 cup cherry tomatoes
  • 2 cloves garlic, minced
  • 1/2 onion chopped
  • 2 cups vegetable broth
  • 1/2 teaspoon smoked paprika
  • to taste salt and pepper
  • for garnish fresh parsley

Instructions: 

  • Season the salmon fillets with salt and pepper.
  • In a large skillet, heat some olive oil over medium heat and sear the salmon fillets until cooked through. Remove and set aside.
  • In the same skillet, add the cherry tomatoes, garlic, and onion. Cook until softened.
  • Add the vegetable broth and smoked paprika. Simmer for 10 minutes.
  • Use a hand blender to blend the mixture until smooth.
  • Return the salmon fillets to the skillet and simmer for another 5 minutes.
  • Serve the salmon with the smoked tomato broth, garnished with fresh parsley.

Notes:

This dish is perfect for a romantic dinner. Pair it with a light white wine for the best experience.
