Instructions:
Place beef chuck roast in a slow cooker.
Add onion, garlic, beef broth, soy sauce, Worcestershire sauce, Dijon mustard, thyme, salt, and pepper.
Cook on low for 8 hours or high for 4 hours until beef is tender.
Remove beef from slow cooker and shred with two forks.
Strain the cooking liquid and use it for dipping sauce.
Preheat oven to broil.
Slice French rolls in half and place on a baking sheet.
Toast the rolls in the oven until lightly golden.
Pile shredded beef on the bottom half of each roll and top with provolone cheese.
Place under the broiler until cheese is melted.
