Ingredients:  

Main Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 Zest of 1 lemon
  • 1 cup fresh blueberries

Instructions: 

  • Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  • In a bowl, whisk together the flour, baking powder, and salt.
  • In a separate bowl, cream the butter and sugar together until light and fluffy.
  • Beat in the eggs, one at a time, then stir in the milk, vanilla extract, and lemon zest.
  • Gradually mix in the dry ingredients until just combined, then gently fold in the blueberries.
  • Pour the batter into the prepared cake pan and bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes:

Feel free to substitute the blueberries with other fruits like raspberries or blackberries.
