Ingredients:

  • 1 lb lean ground turkey
  • 1/2 cup whole wheat breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1/4 cup chopped mushrooms
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • to taste Salt and pepper

Instructions: 

  • In a large mixing bowl, combine all the ingredients and mix well.
  • Shape the mixture into a loaf and place it on a piece of foil.
  • Create a sling out of foil to lower the meatloaf into the Instant Pot.
  • Add 1 cup of water to the Instant Pot and place the trivet inside.
  • Carefully lower the meatloaf onto the trivet.
  • Close the lid, set the valve to sealing, and cook on high pressure for 25 minutes.
  • Allow for a natural pressure release for 10 minutes before quick releasing the remaining pressure.
  • Carefully remove the meatloaf from the Instant Pot using the foil sling.
  • Let it rest for a few minutes before slicing and serving.
