Instructions:
Set the Instant Pot to sauté mode and add the chicken, onion, and garlic. Cook until the chicken is browned.
Add the bell pepper, zucchini, diced tomatoes, paprika, cumin, salt, and pepper. Stir to combine.
Close the lid and set the Instant Pot to manual high pressure for 10 minutes.
Once done, do a quick release and open the lid. Stir the mixture and adjust seasoning if needed.
Serve hot, garnished with fresh parsley.
