Ingredients:  

Main Ingredients

  • 1 lb chicken breast diced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 bell pepper sliced
  • 1 zucchini diced
  • 1 can diced tomatoes
  • 1 tsp paprika
  • 1 tsp cumin
  • to taste salt
  • to taste pepper
  • for garnish fresh parsley

Instructions: 

  • Set the Instant Pot to sauté mode and add the chicken, onion, and garlic. Cook until the chicken is browned.
  • Add the bell pepper, zucchini, diced tomatoes, paprika, cumin, salt, and pepper. Stir to combine.
  • Close the lid and set the Instant Pot to manual high pressure for 10 minutes.
  • Once done, do a quick release and open the lid. Stir the mixture and adjust seasoning if needed.
  • Serve hot, garnished with fresh parsley.
