How to make a meatloaf in the Mini Instant Pot
Hi there friends! Today I am sharing how to make a meatloaf in the Mini Instant Pot. Although, I did not make this meatloaf in the mini Instant Pot. I know that sounds confusing. I used a pan specifically made for the mini Instant Pot, but used it in my 6 Qt. The recipe remains the same regardless. I made a meatloaf and potatoes in the 6 Qt. at the same time. It was amazing and such a breeze. I jumped on Facebook live to share the demonstration. I have used my new mini flower bundlette pan for other goodies such as a pizza omelette HERE, a double devil dog cake HERE, and an ultimate pancake HERE. I absolutely adore my 3 Qt. Mini Instant Pot, my pot roast HERE was amazing too! I had a little trick to make a larger one.
It was actually one of my readers and followers to be the first to make a meatloaf in her new mini flower bundlette pan. In less than 48 hours Sandy used her pan 3 times to make cornbread, an egg/hash brown omelette and the infamous meatloaf. It’s nice when my customers and followers inspire me to try new things as well. Although, I have made meatloaf many times in the Instant Pot using my 2 in 1 Springform/Bundt pan HERE, I don’t think I considered a meatloaf in the mini. Surprisingly it fit more than I anticipated. For this recipe you will need 1.25 lbs of ground sirloin or meatloaf mix combination of beef and pork, 1 egg, 1 cup of breadcrumbs, 1/4 cup of milk or water, 2 tablespoons of Worcestershire sauce, kosher salt, onions, pepper, parsley, 3 pieces of cooked bacon (I buy it already cooked at Aldi’s for cheap) brown sugar and ketchup.
I started off with a package of 1.38 lbs of meat. I knew for certain 1 lb. would work in the pan but was testing to see if I could add more. NOT happening. I had a little left and that is why I say 1.25 lbs will work.
The meatloaf along with the potatoes took a total of 25 minutes with a quick release. It really was cooked to perfection!
For the potatoes I first seasoned them with kosher salt, pepper and just sprayed some olive oil on them. I used a small steamer basket I had from a thrift shop that happens to fit perfectly in my 6 Qt. I then added one cup of water to the pot, set the basket in the pot and the mini meatloaf pan on top of the potatoes. I did NOT cover anything. Feel free to cover the potatoes if you like. This is a leak free pan, however if you use a fatty meat you may have some drainage over the top. Either way, it’s all good to me:) This meal was a perfect serving for 4. What I am digging most about the pan is that the proportions are just right. I find if I make more, I eat more. This leaves me no option. Meatloaf is great though left over. That’s what my Springform/Bundt pan is for.
