A Taste of Italy Right in Your Kitchen

There’s something about Italian cuisine that just warms the heart and satisfies the soul. One of my all-time favorites is Italian sausage and peppers. This dish is a classic, filled with robust flavors that will transport you straight to a quaint trattoria in the heart of Italy.

But let’s face it, we don’t always have the luxury of time to slow-cook our meals. That’s where the pressure cooker comes in. This handy kitchen gadget can cut your cooking time in half, while still delivering that slow-cooked taste.

Gather Your Ingredients

Before we get started, let’s make sure we have everything we need. Here’s a quick rundown:

  • 1 lb Italian sausage: You can use either sweet or hot, depending on your preference.
  • 2 bell peppers: Any color will do, but I like to use a mix of red and green for a pop of color.
  • 1 large onion: Thinly sliced.
  • 3 cloves garlic: Minced.
  • 1 can (14 oz) diced tomatoes: You can also use fresh tomatoes if you prefer.
  • 1/2 cup chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Let’s Get Cooking

Now that we have everything ready, let’s get down to business.

  1. Brown the Sausage: Set your pressure cooker to the sauté setting. Add the sausages and cook until they’re nicely browned on all sides. This should take about 5 minutes. Once done, remove the sausages and set them aside.

  2. Sauté the Veggies: In the same pot, add the sliced onions and peppers. Sauté until they’re soft and the onions are translucent. This should take about 3 minutes. Add the minced garlic and cook for another minute.

  3. Add the Rest of the Ingredients: Add the diced tomatoes, chicken broth, oregano, basil, salt, and pepper. Stir everything together, making sure to scrape the bottom of the pot to get all those tasty bits.

  4. Pressure Cook: Return the sausages to the pot. Secure the lid and set the pressure cooker to high. Cook for 10 minutes. Once done, let the pressure release naturally for 10 minutes, then quick release any remaining pressure.

  5. Serve and Enjoy: Your Italian sausage and peppers are now ready to be enjoyed. Serve them over a bed of rice or with a side of crusty bread.

Italian sausage and peppers is a versatile dish that fits a variety of dining occasions, from a simple family dinner to a festive gathering. With a pressure cooker, this comforting classic is never too far away. Give this recipe a try, and soon, you’ll find yourself making it over and over again, experimenting with flavors and additions that make the dish uniquely yours.
