Butternut squash black bean taco pie in the Instant Pot

It’s Friday and I am winding down my week. I try to share at least one recipe or more here on Home Pressure Cooking weekly. I have told you time and time again that most my recipes are experiments. A lot of my recipes are my own creations, and some I get inspired by and make my own version of it. Today I am sharing a butternut squash black bean taco pie in the Instant Pot. Now if you do not like butternut squash or black beans then this recipe is not for you. It is a weight watchers friendly recipe and I am going to definitely be creating more fall weight watchers meals this season. You can find my Weight Watchers recipes HERE. For this recipe you will need butternut squash, a can of black beans, red cabbage, Apple cider vinegar, soft tortillas, cumin, and cayenne pepper. Keep in mind you can add your own seasonings to taste and make it your own. I always give you the gist of what I did. Next time I make this I will tweak it some. Perhaps add a little cinnamon to the butternut squash when sauteing.
First step to this recipe. I cheated and bought butternut squash already cubed. I paid a tad more, but it was a a lot easier for a quick meal. I added a little olive oil to the Instant Pot and set on saute mode normal. Always wait until the oil gets hot before adding your food. I seasoned the butternut squash with cumin and some cayenne pepper. While sauteing I made sure I was mixing and tossing around the seasonings. I then cut up my red cabbage (Next time I would chop more fine). I threw that in the pot with the butternut squash, and added a douse of apple cider vinegar. I sauted for about 15 minutes to get slightly tender. Remove from pot, rinse pot and set squash and slaw aside.
Next step, I prepared my 7′ Spring form Pan spraying the bottom with Pam. I set my first flour tortilla on the bottom, layered with black beans, butternut squash and slaw, then topped with a sharp white cheddar cheese I had in the house. You can use any cheese, or skip the cheese. I layered until I got to the very top.
I then added one cup of water to the Instant Pot. Set my pan on a trivet and lowered in the pot. I set to High Pressure/Pressure Cook Manual for 18 minutes, then did a Quick release. If you like your butternut squash a little more tender I would add an additional 2 minutes. Mine had a slight bite to them, but I loved it that way. I was actually surprised they were not more tender. I am assuming because they were layered in between the tortilla’s. I removed it from the pot and let sit for a few minutes. I cut up an avocado and cilantro to top it off with. If you like a little hot sauce, feel free to add that on top of your piece. Again, get a little creative and make it your own. Even a squeeze of fresh lime would have been good.

As far as Weight Watchers points go, this is what I came up with. Black beans, butternut squash and red cabbage are all zero on the new freestyle program. The only points I came up with were for the tortillas and little bit of cheese I added. I guesstimated at 4 points per serving. For Dinner this is an awesome meal that you can have two pieces and feel extremely satisfied.
